Back Bacon comes from the pork loin in the middle of the pig and is a leaner cut than streaky. It has a layer of fat that can easily be removed or reduced if you are health conscious but still want to enjoy the taste of bacon. The large area of meat is called the 'medallion' and the shorter tail is where the cut starts to reach the belly. After curing, the bacon is smoked at a low heat, which is enough to flavour the bacon without cooking it.
