A surprisingly springy and zestful dressing made from extra virgin olive oil, orange juice and wine vinegar infused with orange zest and shallot. This is great with salads, pasta and couscous, but you can also use it to marinate all types of meat, prawns or duck. Before you use it, make sure you give it a really good shake to mix all the flavours!
