One of the more expensive cuts of lamb, hence the name 'best end'. The cutlets are individual rib steaks taken from the lamb ribs. The meat is tender and melt in the mouth with a lighter, more delicate flavour. These are the perfect quick-cook lamb cut and are best cooked on the barbecue, grill or griddle.
