George Watkins has been a British favourite since 1830 and this Anchovy Sauce is THE original. The versatility is what makes this a chef’s favourite. It has so many applications, so use it freely whenever you want the full, pungent flavour of salted anchovies. It can be used to liven up the taste of many fish sauces, or added to bechamel sauce or fish volouté to make a superb anchovy sauce. Finish the sauce by whisking in butter and a little lemon juice and cayenne pepper. Add a tablespoon to the mixture if you are making fishcakes or fish pie.
