As the name suggests this cheddar, which is made by Ford Farm Cheesemakers in Dorset, is a 12 month matured West Country Farmhouse Cheddar which is smoked over oak chips for several hours, which gives the rind its characteristic caramel colour and smoulderingly delicious flavour.
