Sencha is the most popular type of Japanese green tea, with a clean green flavour. Both Green and Black teas come from the leaves of the same shrub, Camellia sinensis, which is native to India and Southeast Asia. The difference is down to processing. Black Tea is oxidised or fermented, whereas Green tea is generally steamed to prevent oxidation and to limit the development of caffeine. It also contains the most polyphenols and antioxidants.
