This cut of beef, also known as Jacob’s Ladder, used to be one of the butchery trade’s best kept secrets. It will give beautifully tender, melt in the mouth beef if cooked correctly, and at a very affordable price. Short ribs are exactly that. They are cut from the first five (shorter) ribs, but form part of the ‘chuck’ section rather than the ‘rib’ section. The muscle between the ribs is heavily used, giving meat that is less tender but full of flavour. To unlock the tenderness, low, slow cooking is the secret. Searing the meat on all sides to caramelise the surface will add extra flavour and colour to the final dish.
Typical weight for a single short rib piece is 660g.
