Streaky Bacon comes from the pork belly rather than the loin and the long, narrow rashers have alternating layers of meat and fat. After curing, the bacon is smoked at a low heat, which is enough to flavour the bacon without cooking it. The high fat to meat ratio intensifies the flavour and allows the rashers to become crisp as the fat renders away. It is the perfect cut to wrap around almost any meat, cover the breast of your Christmas turkey, or tuck into a sandwich with a squeeze of tomato ketchup.
