Cheese - Cornish Wild Garlic Yarg

A variant on one of Cornwall's most distinctive cheeses, Wild Garlic Yarg is wrapped in Wild Garlic leaves which grace our Cornish woodlands each spring. Apart from the change of wrapping, Wild Garlic Yarg uses exactly the same recipe as the original nettle-wrapped Yarg, but the wild garlic imparts a gentle garlicky flavour to this version and give the cheese a slightly firmer texture. Made using milk from local grass-fed Cornish cows, then matured for five weeks. As Lynher Dairies themselves say, 'it  whispers rather than shouts its name'.

The Story

And the cheese’s name? Yarg and its variants are made by Lynher Dairies, owned by Catherine Mead and situated in the village of Ponsanooth in mid Cornwall. But their current recipe is based on one originally made in the 1980s by a Bodmin Moor farmer, Alan Gray, after he found the recipe for a nettle-wrapped cheese in his attic. So in memory of Alan, Lynher Dairies named it Yarg, which is his surname spelled backwards.
