One of the cheapest cuts of beef, shin is much underrated. As the name suggests, it comes from the shin of either the hind or foreleg of the animal. The hardworking muscle in this area has ribbons of connective tissue (collagen) running through it which makes the meat very tough. The meat only shows its magic when cooked long and slow. Braising not only brings out the flavour but breaks down the collagen. It melts into the cooking liquid both thickens and adds wonderful flavour so that the meat just melts in the mouth. Shin is therefore ideal for flavoursome stews.
