This classic Blue Stilton is carefully crafted by hand at the Cropwell Bishop Creamery in Nottinghamshire, using methods that have changed little since the 17th Century. The flavour is rich and tangy, and the velvety soft texture makes it melt in the mouth. It is made using a vegetarian rennet and it takes around 78 litres of fresh, local milk to make each round. It is then aged for up to 12 weeks to develop its unique flavour.
Although this Stilton is mouthwatering in its own right, its distinctive flavour pairs beautifully with pudding wines, port, dry sherry, claret, walnuts, honey and pears.

Awards
The awards that this cheese has received reflect the product’s outstanding quality. It beat off 2,500 competitors to become Supreme Champion of the 2009 Nantwich International Cheese Show. In 2016, it was crowned Supreme Champion at the Great Yorkshire Show and in 2017 it was awarded the highest possible 3 stars in the annual Great Taste Awards.
