Wessex Cobber is a delicately flavoured malted bread flour made using soft malt pieces that are kind to your teeth. Many people might refer to this style of bread as 'Granary', but as that particular term is a trade name that belongs to Hovis Ltd, Wessex Mill refer to their malted wheat bread flour as Wessex Cobber. It was given 3 stars at the 2020 Great Taste Awards.

The flour is milled from a mix of Cochise Wheat, Crusoe Wheat, Mulika Wheat and Zyatt Wheat from local farms in Oxfordshire.
