Cheese - Cornish Yarg

One of the most distinctive of all the Cornish cheeses, Cornish Yarg is a quite unique nettle-wrapped semi-hard cheese made, of course, from the milk of local grass-fed Cornish cows. Beneath its beautiful rind lies a delicious, fresh, lemony cheese with a creamy texture and a crumbly core.

The nettle leaves (they lose their sting) are brushed onto the cheese surface where they form an edible wrap which gives a delicate, mushroomy taste and develops its characteristic white bloomy appearance.

The Story

And the cheese’s name? Yarg is made by Lynher Dairies, owned by Catherine Mead and situated in the village of Ponsanooth in mid Cornwall. But their current recipe is based on one originally made in the 1980s by a Bodmin Moor farmer, Alan Gray, after he found the recipe for a nettle-wrapped cheese in his attic. So in memory of Alan, Lynher Dairies named it Yarg, which is his surname spelled backwards.
