Hogs Pudding is a traditional style of sausage native to Devon & Cornwall. It normally contains pork meat and fat with bread or flour and is spiced with black pepper, nutmeg, sage, thyme and other herbs and seasonings. Natural hog casing is used to make about a 5cm (2") diameter sausage. The whole sausage is then cooked in water.
Handmade in our butchery, our Hogs Pudding can be eaten without further cooking, but is more often fried in slices to give it a golden crust as part of a cooked breakfast.
