As you might expect from the title, this flour is a 50/50 mix of Wessex Mill wholemeal and white strong bread flours. It makes excellent loaves or rolls with a lighter texture but retaining the extra flavour given by the wholemeal content.
The flour is milled from a mix of Cochise Wheat, Extase Wheat, Zyatt Wheat and Crusoe Wheat from local farms in Oxfordshire.
